If I moved to a desert island (with electricity) and was allowed just one piece of equipment, it would be the Vita-Mix TNC. This piece of equipment is way more powerful than your average blender, the Vita-Mix can handle ice, frozen fruit, nuts and seeds and all manner of other raw ingredients, as well as the more obvious soups, smoothies and dressings. I hate clutter on my counters. But a good blender is well worth the counter space it takes up. There's simply no tool I use and benefit from more.

I put up with a ratty $30 Osterizer blender for years. It produced lumpy smoothies and constantly jammed when making slaws, soups, and blended salads.
When I made my sports drink of bananas and celery, the celery would be left in chunks, and I'd find myself coughing up strands of the stuff when out on a run with the mixture in my water bottle. I've had my machine for 10 years. Yes they are expensive. Regular readers know that I make smoothies every morning! It's the work horse of my kitchen. The value I have already got out of that machine is a hundred times over what I paid for it. It will be priceless to you. The Vita-Mix machine has to be one of the most versatile pieces of kitchen equipment available in the world today, however, as many of you know, it's far from cheap.

Manufactured in the USA, where there are several models to choose from, the Vita-Mix TNC, and the Vita-Mix Super TNC. (TNC stands for Total Nutrition Centre). The difference between the two is very simple: the latter comes with an extra jug - a 'dry' jug as it is called, which is used purely for milling dry ingredients such as nuts, seeds and grains. It turns them into a fine powder in no time at all.

The basic TNC - though 'basic' is hardly a fitting word for this machine - comes with a 'wet' jug as standard. (The Super comes with both). It holds up to 2 litres of liquid, is made of a clear incredibly tough plastic (polycarbonate), has a durable rubber lid with a removable clear plastic top, for easy access for adding ingredients and also through which to place the 'tamper' (plunger) when needed. The completed jug fits onto the heavy square base, which is white, is fitted with a 2 horsepower, commercial duty motor, and has an on/off switch, a speed dial, and a variable speed option switch (full power/variable). The variety of speed settings is a very useful feature, and we make use of it often.

When I first came across the Vita-Mix at a raw food week conference in Estes Park, Colorado, I was very impressed. It's a big machine - it stands approx. 52cm tall (around 21"), and is very solid looking. The base also weighs quite heavy, so from every angle it seems to speak quality. I watched in amazement as it made light work of blending a whole assortment of foods, which, from experience, I knew my cheap high speed blender would never have handled.

However, it wasn't until I finally saved enough money to buy my own that I became aware of the wide range of uses it has. These include: 'Juicing' (though the fibre remains), milling, grinding, whipping, chopping, homogenizing, blending, creaming and puréeing.

It even 'cooks' if required (soups and so on), because of the speed the blades turn. If left long enough (minutes, rather than seconds) it will use the friction created by the blades to actually heat foods right up to 99 degrees -- and we all know we don't want to go any higher than that or we kill the enzymes and vitamins. But you have to let it run awhile before it actually gets warm. The food is made into a smoothie long before it gets warm.

The types of things I use my machine for are:
1. Super Thick smoothies using fresh or frozen ingredients
2. Ice-creams using frozen fruit
3. Dips and dressings of all types and consistencies
4. Milling oats, grains or nuts for cookies, cakes or pizza bases
5. Whipping for creamy desserts
6. Soups
7. Good old icecream shakes

Before I bought it I wondered how frequently I would use such an expensive machine.
Many people have kitchen equipment that just sits in you pantry. I use my juicer about 3-5 times a week in the summer, and less so in the winter, and my food processor maybe once or twice a month. Not so with the Vita-Mix. It's so easy and quick to use, and literally takes 10 seconds to clean, that mine gets used every single day, often more than once a day.

So while the cost seemed very high initially, when I weighed up the number of uses, the fact it has a 3 year warranty, the ease and speed of use and cleaning, and just how much benefit I will gain from it over the years to come it really has actually come to seem like excellent value for money.

There is plenty more I could say regarding its uses and how it works, why it is so powerful and durable and so on, however the Vita-Mix people have brought out a stunning colour brochure all of their own which does the job far better than I ever could. However, as always I avoid trying to 'sell' anything to anyone, so this review is coming from me as a householder rather than a Vita-Mix agent! In which case it's time to mention the negatives as well as the positives.

To date, to be fair, I've never blown the fuse on it, but I did have it stop working a couple times. I was working it too hard, trying to process too much, too fast. As much as I hoped the machine would be invincible, I learned quite soon that even the Vita-Mix does have its limitations. So when the machine stopped for the first time I admit I panicked, but upon reading the manual I found that there is a special button underneath the base which simply needs to be popped back in to get the machine to start working again. (It has a safety mechanism built in so that should the machine start overheating it cuts out to protect the motor). All it meant was that in future I had to take more care with what I put in and the consistency of it.

Of course, I am possibly a harder taskmaster than most, and I was trying to blend a huge amount of dates with carob and avocado to make a large amount of chocolate pudding! But because the dates weren't soaked at all it struggled for a while, and this led to overheating - understandable really. The same thing happened with a large quantity of spinach. Once more, I just had to learn to either soak the ingredients first, or put the wet stuff in first. "Ah," I finally realised one day, "that's why it's called a 'wet' jug." So… be aware, it's important that you use at the very least moist ingredients when using the standard 'wet' jug.

Likewise the 'dry' jug should ideally only be used for dry foods, as mentioned earlier. It can double up for wet foods as well if you have both jugs and one has already been used, but it doesn't work the other way round - the wet jug can only be used for wet foods.

Apart from that, there have been no other problems or concerns encountered by me or my customers. It has just taken a bit of getting used to as to its limits, but there's no way I could go back to using just a normal blender as this is so superior in so many ways (I've gone though about three regular blenders --killed motors, and cracked glass hoppers)

What also makes this, on weighing everything up, a very good buy all told, is that with both machines you get a free instructional video, an impressive 'Getting Started' recipe binder containing hundreds of recipes and colour photos, and with the Super TNC comes a whole grains booklet to show you how best to use your dry jug.

All in all, and it's a hard decision to make, if I could only have one piece of electrical kitchen equipment, it would be the Vita-Mix. The Champion juicer comes a very close second for juicing carrots, and I rely on that nearly as much.

But the best thing of all has to be the ease of cleaning, which is simply a case of filling the jug with warm water, giving it a whiz on high speed for a few seconds and pouring the water away to reveal a pristine jug. Magic!

The American Dietetic Association thinks you should be able to use any kind of non-calorie sweetener in any amount , at any time of the day so that you can increase the pleasure in your food without increasing the calories. I don't agree. It is best to avoid all no-calorie sweeteners, because they communicate to the receptors on you taste buds and numb them out. This skews taste so that the true full signal at future meals in now distorted and thus more calories are eaten. Lets point out that the ADA receives large amount of funding from fast-food agribusiness. Moderation not deprivation in the key. By using no-calorie sugars you have become a pawn in the game of profits at the expense of your health. Anything that controlls your brain makes you an addict and it becomes very had to be normal again. If you continue to ingest sweet tasting food in inappropriate amounts between meals your going to gain weight and be hungry all the time.

I have seen low carb bread. Of course, it was totally carbs. It's what people want. Diet books are the hottest thing on the market. This is just samples of the current state of nutritional awareness.

Americans Spend 42 Minutes A Day Cooking And 8 Cleaning Up
Consider some recent research on the links between cooking and dietary health. A 2003study by a group of Harvard economists led by David Cutler found that the rise of food preparation outside the home could explain most of the increase in obesity in America. Mass production has driven down the cost of many foods, not only in terms of price but also in the amount of time required to obtain them. The French fry did not become the most popular “vegetable” in America until industry relieved us of the considerable effort needed to prepare French fries ourselves. Similarly, the mass production of cream-filled cakes, fried chicken wings and taquitos, exotically flavored chips or cheesy puffs of refined flour, has transformed all these hard-to-make-at-home foods into the sort of everyday fare you can pick up at the gas station on a whim and for less than a dollar. The fact that we no longer have to plan or even wait to enjoy these items, as we would if we were making them ourselves, makes us that much more likely to indulge impulsively.

Cutler and his colleagues demonstrate that as the “time cost” of food preparation has fallen, calorie consumption has gone up, particularly the consumption of junk food. They found that when we don’t have to cook meals, we eat more of them: as the amount of time Americans spend cooking has dropped by about half, the number of meals Americans eat in a day has climbed; since 1977, we’ve added approximately half a meal to our daily intake. Cutler and his colleagues also surveyed cooking patterns across several cultures and found that obesity rates are inversely correlated with the amount of time spent on food preparation.

The more time a nation devotes to food preparation at home, the lower its rate of obesity. In fact, the amount of time spent cooking predicts obesity rates more reliably than female participation in the labor force or income. Other research supports the idea that cooking is a better predictor of a healthful diet than social class: a 1992 study in The Journal of the American Dietetic Association found that poor women who routinely cooked were more likely to eat a more healthful diet than well-to-do women who did not.

So cooking matters — a lot. Which when you think about it, should come as no surprise. When we let corporations do the cooking, they’re bound to go heavy on sugar, fat and salt; these are three tastes we’re hard-wired to like, which happen to be dirt cheap to add and do a good job masking the shortcomings of processed food. And if you make special-occasion foods cheap and easy enough to eat every day, we will eat them every day. The time and work involved in cooking, as well as the delay in gratification built into the process, served as an important check on our appetite. Now that check is gone, and we’re struggling to deal with the consequences.

Without Vitamin D, bones can become thin, brittle, soft, or misshapen. Vitamin D prevents rickets in children and osteomalacia in adults -- a disease that result in defects that weaken bones.

Don’t get me started, but everybody wants you unable to make a decision for yourself. It is about the economy, or the bird flu. They don’t want you to think for yourself. It’s absolutely tragic that dermatologists and sunscreen manufacturers have done such a thorough job of scaring people out of the sun – again their answer to this problem -- makes them money. Don't buy into their fears -- you don't need their products.

48 Hours Before the Sun Reaches Your Bloodstream?
If you thought as I did that the sunshine goes right into your body, you would be wrong. New evidence shows it takes up to 48 hours. Therefore, if you shower with soap, you will simply wash off some of the sunshine. Therefore, to optimize your D3 levels you need to delay washing. I can hear all you stinky folks out there gasping. What about B.O.? Not many folks live in caves like hermits. You only need to use soap underneath your arms and your groin area. You will just want to avoid soaping up the larger areas of your body that were exposed to the sun.

There are two primary forms of ultraviolet radiation from the sun. UVA and UVB. UVA has a frequency of 320 to 400 nanometers, and this causes you to tan. UVB is the good guy and its wavelengths are from 280 to 320. (A wavelength is the distance a wave has to travel before it starts repeating itself, and a nanometer is a millionth of a meter.) Because UVA is longer, it penetrates the skin and materials like window glass. When it goes into the skin, it causes free radical damage. UVA is quite constant during all the hours of daylight and though out the entire year. (That is why you can burn on a cloudy day.) By comparison, UVB waves (the good kind) are low in the morning, evening, and high at midday and can be filtered out by window glass. Take your sunbathing outside, sitting in a sunny window will not work.

Good UVB’s Cancel The Bad UVA’s
Malignant melanoma has been increasing at an exponential rate in indoor workers since before 1940. The reason is indoor exposure to UVA radiation. Unlike UVB, which is blocked by glass, UVA can pass though windows. UVA can cause cancerous mutations. To much sun or sunburn can break down the good Vitamin D formed in your skin after outdoor UVB exposure. Vitamin D from UVB are important defenses against melanoma when you have an equal amount of UVB to UVA.

Vitamin pill -- Natural sunlight cannot be over accumulated and is never toxic. I'm just for the real thing.

The recommendation for Vit A is from 1000 to 5000 IU of Vitamin D daily. Vit A can become toxic. Why, because you store Vitamin D and don’t turn it into Super D until you need it. Oral supplements of Vitamin D can take six months or longer to normalize. When outside you get both UVA and UVB together. To obtain this amount from milk one would need to consume 50 glasses. With a multi-vitamin, you would need more than 10 tablets. Neither is advisable. Supplements become ineffective when eaten with calcium, or protein.

Food source are very limited and that is why I am stressing to you the need to be outside.

Holly How Much Sun – Be Exact?
Glad you asked.
The key point here is to optimize your vitamin D intake by subjecting a large portion of you body to13 minutes of safe outdoor noon sun exposure, being careful not to get sunburned. You need this about 3 times a week. If you know exactly how much sun, it takes for you to turn your skin pink, then one-fourth of this time will be needed for you to spend in the sun, about 2 to 3 times a week. This is about 5,000 IU.

Is Academic Medicine For Sale?

Drug companies don't do real health research. The only type of research that is funded and recognized is investigation into drugs. The AMA says that the only thing that heals is drugs (so if acupuncture, herbs, or nutrition healed you it just didn’t happen.) Do you believe that all the pink breast cancer people are looking for a way to heal Cancer? They are not looking for the cure to the disease. #37Eating Fat Doesn't make you FAT

The smoothie has less calories, and cholesterol.The Fat Myth For years the American Heart Association. (1996) and the American Diabetes Association (since 1997) have been pushing a low fat diet? They said if you don't eat fat you won't gain weight. There is only one problem, science didn't support these recommendation and time proved it wrong. Over the last 30 years Americans have followed their doc's advice and the obesity rate has tripled. Fat consumption is down by 42%, and yet American's are growing fatter. For the first time in history the human species expectancy is declining, so that children of this generation will live sicker and die younger than their parents. Americans tried to fix their hunger feelings with white flour, white rice, pasta, potatoes and sugar. These types of carbohydrates raised insulin levels which in turn promoted weight gain. The American Heart Association's own statistics show that between 1979 and 1996 medical procedures for heart disease increased from 1/2 million to 5.4 million. Heart disease did not decrease with the low fat diet either. Thank you, doctors for all your help.
All Fats Are NOT Created Equal The most dangerous fats are called "trans fats" they are man made and resemble the molecule of plastic. These are found when margarine and shortening are produced and are just plain toxic. They block your metabolism, give you no energy, create weight gain and increase your risk of diabetes, heart disease and cancer, ten fold. The commerical baking industry loves them because they make carb products that will not spoil or mold. They remain stable in landfills for generations after generation. A twenty year on going trial on Twinkies has found that they will not mold or rot. Personally, I have a package of individually wrapped cheese slices that are 10 years old. They have not molded and don't look a spec different than the day they were bought at the grocery store.

Drug companies would have you believe that the "bad" or LDL (low density lipotrotein) cholesterol is the single biggest factor in the development of heart disease. But the truth is that the determining factor is the ratio of your total cholesterol to you "good" or HDL (high density lipoprotein) cholesterol. There is an easy way to remember this cholesterol thing LDL is for lousy cholesterol, HDL is the happy cholesterol. The truth is that ratio between your total cholesterol and your HDL is almost entirely determined by the type and amount of carbohydrates you eat and not by the amount of fat you consume.

Why Haven’t You Heard About All This Before? When I talk science to people, I often hear “If that is true why doesn’t the media tell us that?” or “Why do I hear just the opposite?” These are great questions. The answers are a crucial part of the cover-up. Much is governed by the golden rule. Those who have the gold make all the rules. There are powerful, influential and enormously wealthy industries that stand to loose a huge amount of cash if you change how you eat. Fat Chance!! Some fats actually are good for you, and even help you loose weight. I would even go so far as to say some fats are healthy and some are lethal. The type of fat you consume is way more important than the amount of fat you eat. Your brain is made up of 60% fat, including a special saturated fat called lauric acid which is an omega-3 fat. These fats are also found in our cell membranes and are used as preferred sources of energy by the heart. This same fat helps the immune system by killing viruses and bad yeasts. Lauric acid, is found in raw coconuts, coconut milk, coconut oil, palm fruit oil and macdamia nuts and oils. Eating Fats does NOT raise you cholesterol

20 years of physician telling you to eat low fat food and take your pills -- will not change the above science fact. Eating fat doesn't make you fat. All non-biased science based information proves that eating polyunsaturated fats DOES NOT make you fat nor does it raise your cholesterol. Feedlot raised beef contains 500% more saturated fat than grass-fed beef. There are many reasons for choosing to eat cleaner forms of animal protein, which as reduced intake of pesticides, hormones (to make the cow meat more fat) and antibiotics (to keep them healthy in small filthy feedlots.) (If you live in northern Colorado I have many farm folks who grow healthy cows and can give you there names and numbers -- their meat is no more expensive than feed lot regular cows.)

Canola oil from the rape seed, referred to as the Canadian oil because Canada is
mainly responsible for it being marketed in the USA. Studies with lab animals were
disastrous. Rats developed fatty degeneration of heart, kidney, adrenals, and
thyroid gland. When canola oil was withdrawn from their diets, the deposits
dissolved but scar tissue remained on all vital organs. No studies on humans
were made before money was spent to promote Canola oil in the USA.

Check products for ingredients. If the label says, "may contain the following"
and lists canola oil, you know it contains canola oil because it is the cheapest
oil and the Canadian government subsidizes it to industries involved in food

I don't know what you'll be cooking with tonight, but I'll be using coconut oil
and old-fashioned butter, NOT genetically unmodified cow.

Time to go to the kitchen and toss out all the bad fats.
(no more crisco, canola oil or corn oil)
Next time your at the store buy extra virgin Coconut oil.
Then when you have a recipe for butter or margarine do the switch.
We fry taco's in coconut oil and nobody has every said my these taste tropical.

Is this a factual science truth? Unfortunately, this is misinformation paid for extensively by Milk’s advertising campaign. About 1940 the Meat and Dairy Association started by teaching elementary school children the four
basic food groups and making the food pyramid to sell their products.

Cow milk is perfect for the cow, but do we want to grow that much each year of life? Elephant milk, wolf milk, tiger milk and human milk all have marked differences in the content of fat, protein, sugar, and minerals. The composition is consistently different for each animal, and after a very short period of time, the baby stops drinking the milk. Humans are the only species that continue to drink milk after birth.

Dr. Campbell head of the nutritional research at Cornell and the China Project for the U.S. Federal Government reported that osteoporosis tends to occur in countries where calcium intake is the highest and most of it comes from protein rich dairy products. Animal Source Calcium Won’t Help Our Bones

Allow The Kids To Make Their Own Milk.
For presoaking the nuts (almond, hazelnuts, brazil, or cashew) in water when you go to bed at night. In the morning rinse and recover with fresh water. When you go to use the nut drain and rinse the nut one more time. Nut milk is super easy to make. Put one part nuts to four parts water into the blender and wiz them on high until the nuts are completely broken down. Add 1 T. ground flax seed and 1 t. lecithin granules. Next, pour the milk though a piece of cheesecloth or a big tea fine strainer. You may enjoy adding 1-teaspoon vanilla or orange extract to your milk. For many of my raw smoothies I just leave the pulp right in the blender. Almonds are the only nuts that are known to alkalize the blood. It is high in arginine, an amino acid that boosts the immune system and inhibits tumor growth.

Warm Carob Cashew Almond Milk
Soak ¼ c raw almonds and ¼ c raw cashews overnight. Rinse and drain. Add 3 cups of hot water, 1 T fresh ground flaxseeds, 1 tsp. Lecithin granules, 2 T carob powder, 1 t. cocoa powder, 2 t. agave, 1t. vanilla and wiz

Sweet Crème Fraiche
1 ½ c soaked cashews
1 Tablespoon + 2 teaspoons lemon juice
pinch of salt
3 Tablespoons + 1 t agave
½ c water
Begin to pulse slowly and then turn up the speed. This will look just like whipped cream when your done, but will taste better and be full of calcium and enzymes.

¾ oz Irish Moss (this is dried seaweed and used as a clear thickener)
½ c water
Combine with moss and wiz in the blender until very smooth and thick.
Add 1 c coconut milk
½-cup coconut meat
½ c soaked cashews (at least 5 hours in water)
¼ cup + 1 Tablespoon agave (this is found next to the honey)
1-teaspoon lemon juice
1-teaspoon vanilla
pinch of salt
Wiz this all in the blender until very smooth then add
1 ½ t teaspoon lecithin
½ c coconut oil
Wiz until well incorporated. Pour over fresh fruit and set in fridge for 3 hours until firm.

Tory Long's best whipped cream ever
Tory had us over for dinner and dessert one night, not long ago and served the best
warm brownies and they had the thickest lactose free whipped cream ever. Here is her recipes
1can of Thai brand coconut milk refigerated overnight (the other brands contain
emulsifiers that keep the water and the solid coconut from seperating.) Keeping it cold is to help you seperate the solid from the liquid.
Pour off the liquid and use it for a smoothie the next morning.
Scoop out the solid coconut at the bottem of the can and whizz it in the blender
with a pinch of stevia. This makes up into enough whipped cream for six people.
